Comte

Comté (“Kohm-tay”) is a bold and nutty French mountain cheese made in the Jura plateau region. Firm, raw cow’s milk cheese is aged to perfection in special ripening caves. Comté was one of the first cheeses to be granted AOC (Appellation d'origine controlee) status in 1958, a rigorously defined standard that recognizes the intimate connection between a cheese and its terroir, or region of origin. Comté offers a perfect balance of salty and sweet flavors that delicately linger on the palate.
