Blue Cheese Walnut Wafers

Ingredients

  • 1 c. blue cheese, crumbled, at room temperature
  • 1/4 c. butter, cut into pieces, at room temperature
  • 1 c. flour
  • 1 c. walnuts, finely chopped

Directions

  1. In a medium bowl, cream the blue cheese and butter with an electric mixer until fluffy. Mix in flour and walnuts thoroughly. Form into a log about 2 inches in diameter and 12 inches long. Wrap in plastic wrap and chill for at least 1 hour or overnight.
  2. Preheat oven to 375° F. Cut log into slices 1/4 inch thick. Place slices 1/2 inch apart on baking sheets. Bake for 12 to 14 minutes. Watch closely. Bake just until bottoms are lightly browned. Cool on wire racks. Store in air tight container.
