Figs with Melted Goat Cheese


  • 1-3/4 cups Port wine
  • 6 tablespoons sugar, divided
  • 1 cinnamon stick
  • 8 fresh figs
  • 1-1/2 cups (6 oz.) goat cheese, grated
  • 1 tbsp. butter
  • 4 ounces walnuts
  • 3 heads of chicory
  • 1 tbsp. olive oil


  1. Preheat oven to 350°F.
  2. Cook the port wine with 3 Tablespoons of sugar and the cinnamon stick. Reduce to the consistency of syrup.
  3. Cut the figs crosswise at the top, cutting in up to a little before halfway. Place the figs on a baking sheet with the grated cheese on top. Bake for about 5 minutes. Take out of the oven and let cool.
  4. Dissolve the rest of the sugar with the butter until turns to a light golden brown. Add the walnuts and caramelize until golden brown.
  5. To serve, remove a few chicory leaves and drizzle them with olive oil. Lay the chicory leaves on a plate and serve with figs and walnuts on top. Granish with the port syrup.
