Fresh Mozzarella Pizza Sliders

  • 1 1/2 tbsp. yeast
  • 1 tbsp. sugar
  • 1 c. warm water (110 degrees)
  • 2 1/2 c. unbleached flour
  • 2 tablespoons olive oil
  • 1 tsp. salt
  • 3 tablespoons butter, melted
  • 1/2 c. Parmesan cheese
  • 4 tablespoons Italian herb blend


  • 16 ounces fresh mozzarella, sliced
  • roasted red pepper
  • 5 leaves fresh basil
  • balsamic vinegar
  • 5 slices pepperoni
  • 5 tablespoons pizza sauce



  1. Whisk yeast, sugar, and warm water together in a bowl. Cover and let it stand about 10 minutes. Stir in flours, salt and oil. I do this with my dough hook in the Kitchenaid but you can knead it by hand. Separate the dough into about 10 small balls and place them in a greased muffin tin. Cover with a cloth and allow them to rise, about 30 minutes or until the tins are full.
  2. Preheat oven to 400 degrees and bake about 15-20 minutes, until the tops turn brown. Remove from oven and brush with melted butter, parmesan cheese and seasoning. Allow to cool completely.


  1. Layer your toppings per your preference. I did one set with fresh basil, peppers, Stella Mozzarella and balsamic vinegar. The other set with pepperoni, Stella Mozzarella and sauce.
