Norwegian Cheddar Pancakes with Warm Honey Butter

Main Ingredient: Cheese

Yield: 4 servings


  • 1 Package (8 oz.) Cheddar cheese
  • 1-1/2 Cup flour
  • 2 Teaspoon sugar
  • 3/4 Teaspoon baking powder
  • 3/4 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 2 eggs
  • 3/4 Cup plain yogurt
  • 3/4 milk
  • 1/4 Cup salted butter, melted
  • Honey


  1. Shred 3/4 of the cheese; dice remaining quarter and set all aside.
  2. In a large bowl, combine flour, sugar, baking powder, baking soda and salt. Stir in shredded cheese.
  3. In a small bowl, lightly beat eggs; stir in yogurt, milk and butter. Combine the with the dry ingredients; stir just until moistened (batter will be thick).
  4. For each pancake spread 1 heaping tablespoon on a hot, lightly greased fry pan. Cook overn medium heat until bubbles appear in the surface. Flip and brown underside.
  5. Pour honey over each serving and garnish with diced cheese.
