Toasted Brie with Peach Apricot Preserves

Yield: Makes 8 toasts

Ingredients

  • 1 loaf French baguette
  • 1 jar peach apricot preserves
  • 8oz Brie, cut into 1 oz slices
  • Olive oil
  • Salt

Directions

  1. Preheat the oven to 350° F. Cut up the baguette into 1" thick slices and place on a baking sheet. Drizzle with olive oil and salt to taste. Bake for 5 minutes, or until lightly toasted.
  2. Spread the toasted slices with 1 teaspon of peach apricot preserves and top with a slice of Brie. Bake for an additional 2 -3 minutes or until the Brie is warm and begins to melt.
