There are literally dozens of different goat cheeses—also known as chèvre—produced around the world today. Chèvre’s range of flavors and textures can vary as much as any of the cheeses made from cow's milk and the cheese can be covered in or mixed with herbs or spices as well. For good reason, it remains one of the fastest growing categories of cheese. Cheese made from goat milk is relatively low in fat, easily digested and a wonderful source of calcium and protein.
